Handmade Canned Eggplants

Canned eggplants: the main trait of this product is it’s homemade recipe passed on from generations using only the best material.
As a matter of fact, the eggplants grown in our district (Latina) go back to the last century to guarantee the availability of the product during the winter months, the farmers prepare the eggplants in oil.
The tradition of our Handmade products are insured by the origin of the local vegetables: particularly the flavor of our eggplants in this territory.
This vegetable belong to the “ Solanaceae Family”. Potatoes, tomatoes and Peppers also belong to the same family, which has 85 types and 2200 different species.
The eggplants are picked when they are mature and the peel is violet and start to fade.
The Handmade Eggplants are prepared within 48 hours of the picking so they don’t lose excess moister and keep firm during the cooking. The shredded eggplants are cleaned and sliced by hand, immerged in water and put in salt so they lose there natural water, then acidified with Wine Vinegar.
Drained, processed and preserved in glass containers covered with sunflower oil, closed tightly and vacuumed packed.
The grilled eggplants are grilled and then canned.
Our eggplants in oil or roasted can be served as appetizers or side dishes for fish or meat roast
